A method for making a walnut cake using rye is provided to improve the sweet and soft taste of walnut cake by kneading dough at high/middle/low speeds consecutively and adding 1/4 piece of walnut. Egg 10~40wt%, sugar 5~15wt%, salt 0.1~5wt% are mixed to 100wt% of walnut cake dough consisting of wheat flour 10~40wt%, milk powder 1~10wt%, baking powder 0.1~5wt%, soda 0.1~5wt% and the rest rye powder, and the mixture is kneaded after adding water. Butter 1~10wt% and soybean oil 1~10wt% are molten at the temperature of about 30~70‹C and mixed in the dough. The kneaded dough is put into a walnut cake roaster and roasted with filling. The kneading is performed at high, middle, and low speeds successively, where the high speed is 20~6rpm, the middle speed is 5~3rpm, and the low speed is 2~0.3rpm. In the roast step, 1/4 piece of walnut is added. |
