摘要 Uncurdled bean curd using clotted blood of cattle and a preparing method thereof are provided to secure a simple preparing process at a little cost. A method for preparing uncurdled bean curd using clotted blood of cattle comprises the following steps of: dipping washed beans in water for 3-13 hours(S41); pulverizing the swollen beans to prepare a bean juice(S42); filtering the bean juice with a sieve of 100mesh or less so as to separate into a bean liquid and bean curd refuse(S43); heating the bean liquid up to 90-110‹C(S44); cooling off the bean liquid down to 20‹C or less(S45); mixing 600-1200g of cooled bean liquid, 50-95g of clotted blood of cattle and 1-3g of salt(S46); adding a coagulating agent to the mixture(S47); injecting the mixture with the coagulating agent into a packaging container(S48); sterilizing and coagulating the packaged product(S49); and cooling the product to 2-20‹C(S50).
