PROBLEM TO BE SOLVED: To provide a fryer that prevents a burn caused by the fact that equipment or part of an oil tank (particularly the center of the front end) is intensively heated to a high temperature. SOLUTION: The fryer includes an oil tank 2 and a combustion chamber 3 arranged in the equipment 1, a heat exchanger 4 that exchanges heat between a flue gas G1 from the combustion chamber 3 and cooking oil for deep-frying of the oil tank 2, an exhaust cylinder 5 for discharging the flue gas G1. The combustion chamber 3 opens downward, and a ventilation gap 11a is provided to the upper end of the equipment 1. The ventilation gap 11a is used for discharging a rising gas G4 which is the mixture of rising air entering from the opening in the lower part of the equipment with a flue gas G2 flowing out forward from the lower part of the combustion chamber 3, and which flows upward in a space 10 in front of the combustion chamber 3 and in the rear side of the front panel 11 of the equipment 1 to be discharged to the front of the equipment 1. In front of the combustion chamber 3 and in the center in the horizontal direction of the space 10 on the back of the front panel 11 of the equipment 1, there is installed a baffle plate 6 that prevents the rising gas G4 flowing upward in the space 10 from flowing upward in the center in the horizontal direction.
