<P>PROBLEM TO BE SOLVED: To provide a method of manufacturing a polyoxyethylene sorbitan fatty acid ester, capable of restraining bitterness just after manufactured, and capable of restraining the bitterness from increasing with the lapse of time. <P>SOLUTION: This polyoxyethylene sorbitan fatty acid ester is manufactured by reacting an ester (component A) of a 10-22C fatty acid and a 1-3C monohydric alcohol, with at least one (component B) of a sorbitol and sorbitan, to obtain a sorbitan fatty acid ester, and by adding an ethylene oxide thereto. (a) The component B is supplied as 50-90 wt.% of aqueous solution to be mixed with the component A, followed to be dehydrated to 1.0 wt.% or less of moisture content in a system, with respect to total weight of the component A and the component B. (b) The 1-3C monohydric alcohol of 1-10 wt.% and an alkali catalyst of 0.1-1.0 wt.% are added at 50-90°C, with respect to total amount of the component A and the component B. (c) The sorbitan fatty acid ester is obtained by carrying out a transesterfication reaction at 140-190°C of reaction temperature under a nitrogen gas flow.
