摘要 <p><P>PROBLEM TO BE SOLVED: To provide an easy long-term preservation method suitable for preserving fruits and vegetables, especially whole pineapples. <P>SOLUTION: A fruit or vegetable treating method includes sterilizing and disinfecting fruits or vegetables and preserving fruits or vegetables in pressurized inactive gas such as nitrogen gas. It is possible to easily sterilize and disinfect fruits or vegetables by alcohol or ozone gas. Furthermore, it is possible to make fruits, vegetables or pineapples absorb moisture from the surface thereof, and preserve in a fresh condition by covering fruits or vegetables with a water absorbing sheet, or putting water absorbing particles into between fruits or vegetables, and preserving in pressurized inactive gas. It is preferable that the pressure of pressurized inactive gas in a container is 0.1 kg/cm<SP>2</SP>to 1 kg/cm<SP>2</SP>, the preservation temperature is 0-15°C, and slow cooling is performed in a preservation temperature. <P>COPYRIGHT: (C)2009,JPO&INPIT</p>
