A method for preparing the cheonggukjang (thick soybean paste) concentrate, and a cheonggukjang beverage containing the concentrate are provided to remove the specific smell and taste of cheonggukjang. A method for preparing the cheonggukjang concentrate comprises the steps of (S10) dipping 30-90 % of the total cheonggukjang powder in a solvent for 5-10 hours and filtering it with a filter of 300-600 mesh; (S20) adding water to the cheonggukjang cake generated from the previous step to dip it in water, heating it, and filtering it with a filter of 300-600 mesh; (S30) mixing the filtered solution of the first step and the filtered solution of the second step to concentrate it to 15-30 brix; (S40) mixing the obtained one with the remaining cheonggukjang powder to 50-80 brix; and (S50) heating the mixture at 80-100 deg.C for 20-40 min for sterilization. |
