Agglutenic biscuit

The invention refers to the food industry, namely to an agglutenic biscuit. At the preparation of the biscuit it is foreseen the substitution of wheat flour for soriz flour, which is autochthonous raw material not containing gluten. The result of the invention consists is obtaining a dietetic product that can be consumed by persons intolerable to gluten and in reducing the cost price of the finished product.
