A method for manufacturing extract of ginseng berries is provided to intake a ginsenoside component by using the dumped ginseng berries. Extract of ginseng berries is manufacture by mixing and ripening 50-150 wt.pt. of sugars and 0.1-5 wt.pt. of a lactobacillus on the basis of 100 wt.pt. of the ginseng berries. The ginseng berries are irradiated with the light selected from one or more of infrared rays, visible rays, and ultraviolet rays. The sugars are one or more selected from sugar, glucose, fructose, galactose, maltose, oligosaccharide, dextrin, starch syrup, honey, stevioside, aspartame, xylitol, erythritol, paratinos, mannitol, maltitol, inositol, quercitol, solbitol, lactitol, etc. A lactobacillus is one or more selected from a group of lactobicillus, aspergillus, pediococcus, leuconostoc, streptococcuus, bicillus. |
