<P>PROBLEM TO BE SOLVED: To breed a brewer's yeast having a low vicinal diketone or diacetyl-producing ability, and to provide a method for producing a liquor having a reduced content of vicinal diketone or diacetyl. <P>SOLUTION: Provided are an acetolactate synthase gene and a use thereof, especially, the brewer's yeast for producing the liquor excellent in flavor, the liquor produced using the yeast, the method for producing the same, etc. More concretely, provided are a yeast strain whose ability to produce VDK, particularly DA, to cause an off-flavor of a product is reduced by reducing the expression level of ILV6 gene encoding Ilv6p which is an acetolactate synthase in a brewer's yeast strain, particularly nonScILV6 gene which is unique to beer yeast, a process for producing an alcoholic beverage by using the yeast strain, etc. <P>COPYRIGHT: (C)2009,JPO&INPIT |
