PROBLEM TO BE SOLVED: To provide a fryer capable of expanding a variation of fried products compared with a conventional fryer. SOLUTION: A continuous type fryer 1 has an oil tub 6 which has an inlet port 6a for charging food materials P1, and an outlet port 6b for conveying the food materials P1 conveyed from the inlet port 6a and fired. This fryer 1 further has a first duct for taking out oil 20 in the oil tub 6, heating the taken-out oil 20 by a first heat exchanger 36 and feeding it to an inlet feed part 22 of the inlet port 6a inside the oil tub 6, and a second duct 40 for taking out the oil 20 in the oil tub 6, heating the taken-out oil 20 by a second heat exchanger 46 and feeding it to intermediate feed parts 26a, 26b, and 26c between the inlet port 6a and the outlet part 6b inside the oil tub 6.
