<p>The invention relates to a concentrated natural grape juice having antioxidant properties, and to a process for obtaining the same. According to the invention, the juice comprises natural grape juice, enriched with polyphenol compounds and vitamin C, and it has a concentration of total sugars of 600...800 g/l, an acidity of 3.0...4.0 g/100ml and a clear aspect, a deep ruby-colored, with sweet-sourish taste. According to the invention, in a first stage, the process consists in mixing, up to homogenization, grape juice obtained from raw juice subjected to sulphitation, bentonization, decantation, concentration and sterilization, with polyphenol extract obtained from grape seeds, by fractioned extractions, followed by mixing with ascorbic acid, afterwards the resulting mixture is maintained at a given temperature for 15 days, it is bottled and stored at the temperature of 7...15A C, in rooms with a relative humidity up to 65%.</p> |
