PROBLEM TO BE SOLVED: To provide a method for producing well-flavored refined roasted coffee beans high in chlorogenic acid concentrations and low in the mass ratio for hydroxyhydroquinone and chlorogenic acids. SOLUTION: The method for producing refined roasted coffee beans includes the step of bringing raw material roasted coffee beans 12-35 in Hunter L number into contact with coffee beans-derived extract-containing water selected from water containing extract derived from roasted coffee beans 40 or greater in Hunter L number and water containing extract derived from raw coffee beans.
