<P>PROBLEM TO BE SOLVED: To provide a method for producing red bean Natto, enabling sufficient fermentation by Bacillus natto so as to achieve a sufficient sticky condition by one fermentation process, and capable of producing red bean Natto which is free from deterioration in taste and smell. <P>SOLUTION: This method for producing the red bean Natto which has red beans as the main ingredient comprises a boiled red bean-producing process of producing boiled red beans by boiling or steaming red beans, and a boiled red bean-fermenting process of fermenting by Bacillus natto, soybean component-containing boiled red beans which are obtained by adding roasted soybeans to the boiled red beans. <P>COPYRIGHT: (C)2009,JPO&INPIT |
