<P>PROBLEM TO BE SOLVED: To provide a method for controlling pH of mixed fruit juice without using additives through adjusting a mixing ratio of fruit juice so as to satisfy a specific condition. <P>SOLUTION: This method for producing mixed fruit juice or fruit juice drink comprises measuring acidity, amino nitrogen content, and ash content of fruit juice to be mixed, and mixing at least 2 kinds of fruit juice at a mixing ratio which satisfies formula (1): PH=-0.74S+2.76+80α+3β when setting objective pH of mixed fruit juice as PH. In formula (1), PH: objective pH, S: acidity of the mixed fruit juice (citric acid concentration (g/100 ml)), α: an amino nitrogen total amount (g/100 ml) in the mixed fruit juice, and β: an ash total mount (g/100 ml) in the mixed fruit juice. <P>COPYRIGHT: (C)2009,JPO&INPIT |
