摘要 A natural calcium-enriched bean curd and a preparation method thereof are provided to enrich bean curd with natural calcium by adding starfish extract to soy milk. A natural calcium-enriched bean curd contains starfish extract. A method for preparing the starfish extract comprises the following steps of: removing internal organs from starfish; dipping the starfish in an acetic acid solution of 5-10v/v% for 4-8 hours; dipping the starfish in spirits of 30-80v/v% to eliminate toxic materials; dipping the starfish in water and heating to separate a poorly soluble material from it; and washing, filtering and drying the poorly soluble material. A method for preparing the calcium-enriched bean curd comprises the following steps of: adding water 50-70% the amount of swollen beans and pulverizing them; heating the pulverized mixture and filtering to separate into soy milk and bean-curd dregs; aging the soy milk at room temperature and adding a coagulating agent at 60-100°C; and adding the starfish extract to the soy milk with coagulating agent. The content of the starfish extract is 2.5-5 parts on a basis of 100 parts of soy milk.
