Salt with a bitter taste and a preparation method thereof are provided to enable a user to reduce the amount of salt used in everyday life by adding the constant amount of a bitter taste providing material to common salt. A method for preparing salt with a bitter taste comprises the following steps of: mixing the constant amount of a bitter taste providing material to common salt and adding water; heating the mixture and concentrating it to 30%(w/v) or less; and drying the concentrate until the moisture content becomes 0.5% or less. The bitter taste providing material represents Sophora root, Herba Leonuri and gall.
