A fresh ginseng coating composition is provided to enable fresh ginseng to be preserved for a long term without the deterioration of components and to improve the quality of the fresh ginseng. A fresh ginseng coating composition is composed of 0.2-3.0wt% of Glycyrrhiza glabra extract, 0.05-2.5wt% of ascorbic acid 2-glucoside, 0.05-4.0wt% of thiamine hydrochloride, 1.0-3.0wt% of citric acid monohydrate, 0.1-1.0wt% of HPMC(hydroxypropylmethylcellulose), 3.0-7.0wt% of ethanol and 79.5-95.6wt% of water. The Glycyrrhiza glabra extract is prepared by reflux-extracting Glycyrrhiza glabra with a mixed solvent of ethanol and ethyl acetate in a volume ratio of 1 to 1 at the temperature of 70°C for 4 hours or more and vacuum-concentrating it to 30~40Brix and mixing with glycerine. The HPMC is comprised of 19-24wt% of methoxyl groups and 4-12wt% of hydroxyl groups.
