REINFORCED BLACK GINSENG AND THE PRODUCING METHOD THEROF

A component-enriched black ginseng by glycosidase treatment and a preparation method thereof are provided to shorten a black ginseng preparing time without the generation of benzoapyrene. A method for preparing a component-enriched black ginseng comprises the following steps of: soaking ginseng in a saturated aqueous solution of amino acid; steaming the amino acid impregnated ginseng at 85-95°C for 8 hours; drying until the moisture content becomes 15% or less; repeating the steaming and drying steps over 4 times; and adding glycosidase for enzyme treatment. The glycosidase represents pectinase, alpha-galactosidase, beta-galactosidase, cellulose, hesperidinase or beta-glucosidase. The amino acid is arginine.
