A Helianthus tuberosus tea and a preparation method thereof are provided to remove specific smell of Helianthus tuberosus and to secure useful components included in the Helianthus tuberosus without complicated preparing processes. A method for preparing a Helianthus tuberosus tea comprises the following steps of: washing Helianthus tuberosus; thinly slicing the washed Helianthus tuberosus to a thickness of 0.5~1.0cm; drying the Helianthus tuberosus slices; parching the dried Helianthus tuberosus slices; pulverizing the parched Helianthus tuberosus slices; and packaging the Helianthus tuberosus powder. The Helianthus tuberosus tea is prepared by adding 7-10 parts of Helianthus tuberosus powder in 100 parts of water and boiling at 80~100°C for 10~15 minutes. In the drying step, the Helianthus tuberosus slices are dried in a dryer of 65~70°C for 70~75 hours. In the parching step, the Helianthus tuberosus slices are parched at 70~80°C for 10~15 minutes.
