FIELD: food industry. ^ SUBSTANCE: according to the method pre-processed beet roots are put in jars. The jars are filled with water heated to minimum 85C and thus maintained during 2-3 minutes. After that the jars are drained, refilled with brine heated to 95C, closured and autoclaved. ^ EFFECT: invention allows to reduce process time of preserves heat sterilisation and irregularity of product thermal treatment, increase quality of end product, save thermal energy. |
