摘要 PROBLEM TO BE SOLVED: To provide baked confectionery having soft feeling and moist feeling, and maintaining such palate feelings even after long storage, and to provide a method for making the same. SOLUTION: The baked confectionery is made through: kneading a mixture obtained by mixing at least one kind selected from baking powder and yeast, at least one kind selected from grain flours such as hard flour, medium ground flour, soft flour, wheat whole grain flour, brown rice flour, rye, corn, whole milk soybean powder, defatted soybean powder and rice powder, wheat flour gluten, glycerol, and saccharide to form gluten followed by adding an oil and fat component; further kneading the mixture to obtain dough; maturing the dough followed by molding the matured dough; and baking the molded dough.
