Controlled release molasses(CRM), a method for manufacturing the same, and a method for purifying underground water contaminated with nitrate-nitrogen using the same are provided to continue purification operation for a long time. Controlled release molasses includes 30 ~ 70 weight% of molasses, 20 ~ 40 weight% of a binder, 5 ~ 20 weight% of a controlled-release additive, and 1 ~ 20 weight% of silica. The binder including microcrystalline cellulose pulverizes the molasses. The controlled-release additive including hydroxypropylmethylcellulose controls the molasses according to time elapsed. The controlled release molasses purifies contaminated underground water with nitrate nitrogen.
