In a heat exchange apparatus for the treatment of milk consisting of a regenerative section, a pasteurization section and a temperatureregulating section for the inflowing fluid inserted between the pasteurization and the regenerative sections, and one or more cooling sections inserted after the regenerative section, the regenerative section, besides being provided in known manner with heat exchanging plates for raw milk and pasteurized milk, is provided with additional heat exchanging plates for a cooling medium and a heating medium, for use in the treatment of milk for consumption and milk for manufacturing purposes respectively. By using a cooling medium, the pasteurized milk, independent of the regenerative effect, can be cooled to a predetermined temperature for a definite time, whereby the efficiency of the pasteurization section can be determined within absolutely fixed limits. In a preferred embodiment of the apparatus a temperature holder section is inserted after the regenerative section containing the additional heat exchanging plates, which when the apparatus is used for pasteurizing milk for consumption exerts no influence on the pasteurization, whereas when the apparatus is used for the treatment of milk for manufacturing purposes it functions normally i.e. serving as a temperature holder, while the temperature regulating section at the same time allows the milk to receive such a degree of pasteurization that it reacts negatively to Stooch's test.</p> |
