A method for preparing the mayonnaise by using no eggs, and the mayonnaise prepared by the method are provided to remove the danger due to cholesterol and allergy by using no eggs. A method for preparing the mayonnaise by using no eggs comprises the steps of dissolving 0.3~1% of polyglycerin fatty acid ester in 10~20% of water to homogenize it and cooling it to 10°C or below; adding sugar 1~2%, salt 1~2%, vinegar 3~16%, xanthan gum 0.1~0.5% and garlic powder 0.1~0.3% to it for pre-emulsification; and emulsifying it with adding 65~75% of an edible oil slowly and with stirring. |
