PROBLEM TO BE SOLVED: To provide an evaporating-dehydrating apparatus capable of sufficiently evaporating and dehydrating a dried object in a drying container, efficiently exchanging heat, and suppressing energy consumption at a running time. SOLUTION: This evaporating-dehydrating apparatus comprises the drying container 1, a steam condenser 3 exchanging heat with contents of the drying container 1, and steam lines La, 10, 11 for communicating these members 1, 2, 3, a pressure of the steam is raised by the steam compressor 2 to increase a saturation temperature, condensation latent heat of the pressure-raised steam is exchanged with the dried object in the drying container 1 to be utilized in evaporating and dehydrating the dried object, and the steam condenser (main condenser 3) comprises a plurality of (e.g., two in pair) of hollow rotors (unit 3au) extending in parallel.
