In order to provide a preparation which is simple to process and from which, by mixing with an aqueous liquid, even in the cold, a clear food product, in particular a coating mass for foods, a food spread, a sauce or a dessert, can be prepared, is proposed, such that this preparation comprises a gelatin-based material and at least one of the hydrocolloids xanthan and konjac, wherein the gelatin-based material is selected in such a manner that it is soluble in water having a temperature of 25°C. Furthermore, a method of producing a coating mass for foods, a food spread, a sauce or a dessert is proposed, for the carrying out of which the abovementioned preparation can be used. |
