<P>PROBLEM TO BE SOLVED: To provide a method for producing bone-soup material comprising a means of automatically and perfectly removing a cerebrospinal part in the fist part of a pork bone, or the like, which has conventionally been removed by hands, so as to produce high-quality soup raw material. <P>SOLUTION: The method for producing bone-soup material comprises putting a net basket body 23 into a tank 20, followed by housing fist-like bones, each being cut to an appropriate length; supplying water to the tank; heating the bones in the tank; stopping heating, after a prescribed time; eliminating boiling water mixed with scum, such as, blood seeping out of fist-like bones due to heating; washing the fist bones; resupplying water in the tank and heating the bones in the tank; attaching a cutting axis 15 having cutting beetles 17, 18 at eccentric positions of a disk 13 set up above the tank; inserting the cutting axis into the tank, to stir the boiling water; repeatedly taking scum which gush out of the boiling water; stopping the disk to stop the stirring rotation of the cutting axis, after the cerebrospinal part of the fist-like bones gets out completely; and opening the discharge port of the lower end part of the tank to remove the thick liquid.
