摘要 A method for making enriched butter includes producing high-fatty cream, normalizing, converting the high-fatty cream into butter, homogenizing. While homogenizing, a suspension of powdered carrots and bananas is added in an amount of 0.5...6.0 % of the content of the mixture in the ready butter. The suspension is prepared by means of mixing the powdered carrots and bananas with the water preliminary pasteurized, milk or buttermilk in a ratio from 1:0.5:1 to 1:4:15. The mixing is carried out at a temperature of 15...45 °С with the following keeping at this temperature for 5...30 min, then the suspension prepared is cooled up to the temperature of the homogenization of the butter.
