摘要 PROBLEM TO BE SOLVED: To provide a method for producing sweet brown-rice jelly which can be taken comfortably and tastily by everyone. SOLUTION: The method for producing sweet brown-rice jelly includes: roasting wet brown rice or germinated brown rice prepared through being carefully washed and left as it is for 2 or 3 hours, with a pan or a cooking plate until the color of the rice changes into light brown; soaking the roasted rice in pure water for about 24 hours again so as to sufficiently contain water followed by removing the rice into another container; heating the rice with strong fire; and leaving the boiled brown rice as it is until the temperature of the rice decreases to a normal temperature. However, the brown rice is further cooked moderately with medium fire because some solid brown rice grains possibly remain, and agar water solution and seasoning materials are added to the brown rice by little and little when the temperature of the rice reaches to 70-80°C, the mixture is brought to be boiled with strong fire when completely mixed, and the mixture is removed to another vessel separately prepared while being heat-insulated so as to coagulate the mixture.
