Starch-acid food products comprise starch and adipic or fumaric acid. The ratio of the starch to the acid may be from 15 : 1 to 35 : 1. Examples are of mixtures of adipic acid and of fumaric acid with corn starch, sucrose, colouring material, lemon flavouring and salt which may be stored for over 20 days at 85 per cent relative humidity and 90 DEG F. without impairment of gelling properties or of flavour when made into puddings by adding egg yolk, water and more sugar and heating to boiling. |
