<P>PROBLEM TO BE SOLVED: To provide boiled rice for cryopreservation which is less apt to cause deterioration in the quality due to natural thawing and chilled preservation, as compared to conventional products, and to provide a method for producing boiled rice. <P>SOLUTION: This method for producing the boiled rice for cryopreservation comprises a process of soaking refined rice in water; a process of performing addition of water for boiling to the soaked refined rice; a process of boiling the refined rice added with water; a process of obtaining the boiled rice for cryopreservation through cooling the boiled rice, obtained by boiling to a preservation temperature; and a process of adding a gelling agent, in the previous process of the boiling process. The amount of water added for boiling is adjusted so as to bring the water content in the boiled rice for cryopreservation, to 60-75 wt.%. <P>COPYRIGHT: (C)2009,JPO&INPIT |
