A method for preparing minced beef is provided to secure nutritional quality of side dishes cooked using the mined beef by finely chopping beef, parching the chopped beef and seal-packing a product. A method for preparing minced beef comprises the following steps of: finely chopping 9.20wt% of onion and 2.10wt% of garlic on a total weight basis of the minced beef and preparing 84.60wt% of minced beef(S100); mixing the onion, garlic and minced beef and parching the mixture(S110); adding 2.10wt% of sesame, 1.30wt% of Soju(Korean alcohol) and 0.70wt% of refined salt to the mixture(S120); and removing the juice and oil from all the ingredients to be dehydrated(S130). In the mixing step, the temperature of fermenting ingredient is maintained at 80°C. |
