METHOD FOR PREPARING FREEZE-DRIED CITRUS JUNOS BLOCKS, CAPABLE OF ENABLING A CONSUMER TO EASILY TAKE EFFECTIVE COMPONENTS OF CITRUS JUNOS

A method for preparing freeze-dried Citrus junos blocks is provided to minimize the destruction of nutrients and to enable a consumer to eat Citrus junos with ease regardless of places, which results from a freeze-drying process. A method for preparing freeze-dried Citrus junos blocks comprises the following steps of: sterilizing and washing Citrus junos; dividing the Citrus junos into two pieces and removing inedible parts; cutting the Citrus junos 2-4mm in size to prepare Citrus junos particles; mixing an additive to the Citrus junos particles in order to obtain a Citrus junos mixture; putting the Citrus junos mixture in a molding frame and molding the Citrus junos mixture in a constant shape; putting the molded Citrus junos mixture in a freeze-dryer and rapidly freezing the mixture at 35-45 degrees below zero; and freeze-drying the frozen mixture under the condition of the temperature of fermenting material of 40-50°C and the degree of vacuum of 0.1-0.5Torr.
