<P>PROBLEM TO BE SOLVED: To provide a sparkling alcoholic beverage, having full body and proper retentivity of foam, and containing water-soluble dietary fiber by using a low-cost auxiliary raw material, and to provide a method for producing the alcoholic beverage. <P>SOLUTION: The sparkling alcoholic beverage is produced by using at least one kind selected from among a group consisting of an etherified starch, an etherified crosslinked starch and an enzymically hydrolyzed product thereof as a part of a raw material. The method for producing the sparkling alcoholic beverage includes adding in at least any one kind selected from among a group consisting of the etherified starch, the etherified crosslinked starch and the enzymically hydrolyzed product thereof, in a single step in the production process. <P>COPYRIGHT: (C)2009,JPO&INPIT |
