<P>PROBLEM TO BE SOLVED: To provide a method for producing a meat substitute product, and an instant meat substitute product using the meat substitute product. <P>SOLUTION: The method for producing the meat substitute product comprises mixing a protein, a hydrophilic colloid, that precipitates by a metal cation, and water at an elevated temperature until a homogeneous mixture is formed, then mixing the mixture with a solution of a metal cation of at least bi-valent so that a fibrous product is formed, then obtaining fibrous products. The protein to be used is a material containing such animal proteins as card, cheese, milk powder, etc. or materials originated from these materials, and the hydrophilic colloid is selected from pectin, gellan gum, and alginate, each of these contains a low amount of a methoxy group. <P>COPYRIGHT: (C)2009,JPO&INPIT |
