<P>PROBLEM TO BE SOLVED: To provide a gel-containing food composition favorably meltable in the mouth, having smooth palate feeling, excellent in refreshing feeling, and enabling a spoon to be easily inserted into frozen confectionery, when producing frozen confectionery through freezing a liquid composition. <P>SOLUTION: The method for producing a gel-containing food composition comprises mixing crushed jelly or micro jelly with liquid part containing a thickener, saccharide, fruit juice and water. The method enables production of the gel-containing food composition having favorable meltability in the mouth and smooth palate feeling, excellent in refreshing feeling, and allowing a spoon to be easily inserted into frozen confectionery when being frozen to be formed into the frozen confectionery, even if suppressing Brix to ≤30%. <P>COPYRIGHT: (C)2009,JPO&INPIT |
