The coating comprises a triglyceride with a specific proportion of fatty acid chains with a given length and with a specific solids content. A barrier coating for preventing moisture transport between components with different moisture contents in a food product comprises a triglyceride (mixture) in which at least 20 % of the fatty acid chains contain less than 16 carbon atoms or are substituted with a hydroxyl group. The triglyceride (mixture) has a solids content of at least 40 wt.%.
