Soybean milk with reduced peculiar soybean smell, and its preparation method are provided to inhibit the generation of compounds related to the bad sensory properties of soybean by applying microwaves. Soybean milk with reduced peculiar soybean smell is prepared by the steps of: (a) applying microwaves(2450MHz, 700W) to selected soybeans for 20~60sec to inactivate lipoxygenase; (b) soaking the microwave-exposed soybeans in hot water at 80~100°C; (c) crushing the soaked soybeans to soften the tissue; (d) removing bean curd refuge; and (e) producing soybean milk. In the step (a), the activity of lipoxygenase is rapidly inhibited by microwaves. |
