<P>PROBLEM TO BE SOLVED: To provide refined rapeseed oil having emulsification functionality, a low acid value, excellent flavor, and light color, and to provide an effective method for producing the refined rapeseed oil. <P>SOLUTION: This method for producing the refined rapeseed oil includes, in a refining process of rapeseed crude oil, performing pigment absorbing treatment and steam distillation treatment at 200-250°C without performing degumming treatment, alkaline deoxidation treatment, and water washing treatment. The refined rapeseed oil which has an acid value of ≤0.5, a color (Lovibond method) of red of ≤10 and yellow of ≤70, a weight ratio of the refined rapeseed oil to water of 70:30, and emulsifiability or emulsion stability is also provided. Furthermore, an oil and fat composition, processed food, and bread, cakes and daily dishes which use the refined rapeseed oil are each provided. <P>COPYRIGHT: (C)2009,JPO&INPIT |
