<P>PROBLEM TO BE SOLVED: To provide a foaming emulsifier composition for cake having high foaming force and foaming stability even produced by an oil-in-mix method in particular, and to provide a cake produced using the foaming emulsifier composition for cake. <P>SOLUTION: The foaming emulsifier composition for cake contains 0.5-10 mass% of a glycerin fatty acid ester (A), 1-10 mass% of a propylene glycol fatty acid ester (B), 0.5-5 mass% of a sorbitan fatty acid ester (C), and 0.5-5 mass% of a sucross fatty acid ester and/or a polyglyceryl fatty acid ester having HLB 5-15 (D), wherein the main constituent fatty acid of the sorbitan fatty acid ester (C) and/or the sucross fatty acid ester and/or a polyglyceryl fatty acid ester having HLB 5-15 (D) comprises 22C saturated fatty acid. <P>COPYRIGHT: (C)2009,JPO&INPIT |
