A preparation method of a fermented black-garlic product, and a food composition containing the fermented product are provided to obtain the fermented black-garlic product excellent in flavor and taste by inoculating fermentation fungi into a black garlic solution and then culturing them at a proper temperature. A preparation method of a fermented black-garlic product comprises the steps of: mixing 5~30%(w/v) of black garlic powder and a carbon source having a sugar content of 5~20brix to make a culture medium for fermentation; inoculating a fermentation microorganism into the culture medium; and then fermenting. The carbon source comprises at least one selected from the group consisting of the water-extract of Angelica gigas Nakai, glucose, sugar, fructose, and molasses. The fermentation microorganism is one of the yeast, acetobacter, lactobacillus, and mold. A food composition containing the fermented product is used for vinegar, a seasoning, and a food additive. |
