Farinaceous foods are cooked, drained and dried by immersion in an organic solvent completely miscible with water which is then removed by evaporation. The solvent may be ethyl alcohol and the food may be successively immersed in a counter current system. The solvent may be recovered by distillation. The process is applicable to formed foods such as spaghetti, vermicetti, macaroni. |
