<P>PROBLEM TO BE SOLVED: To provide red perilla-containing sesame plum vinegar which is usable as a material for reduced-salt fermented soybean pastes, jams, Japanese cakes, and Western-style cakes, using both plum fruits and sesame through solving problems where plum fruits which are produced in a production process of plum liquor are limited in the range of applications, while being active ingredients, as well as, sesame seeds are in a similar original condition. <P>SOLUTION: A method for producing the red perilla-containing sesame plum vinegar includes sequentially going through (1) a process of washing green plums and fallen plums; (2) a process of mixing plum fruits which are produced in a production process of plum liquor with beer yeast, shochu (Japanese distilled spirit), sake, sesame, and malt, and finely crushing the mixture with a mixer, followed by bringing the mixture into a paste liquid; (3) a process of stirring the product, followed by fermenting; (4) a process of making a red perilla liquid; and (5) a process of mixing the red perilla liquid with the paste liquid, followed by heating. <P>COPYRIGHT: (C)2009,JPO&INPIT |
