<P>PROBLEM TO BE SOLVED: To provide a method for producing low-calorie oil-in-water emulsified substance produced to be resemble mayonnaise in its appearance. <P>SOLUTION: The method for producing low-calorie oil-in-water emulsified substance comprises using oil-phase raw material and water-phase raw material containing heat swelling-type chemically-modified starch: wherein the oil-in-water type emulsified substance contains 3-12 mass% of only a plant sterol fatty acid ester as the oil-phase raw material. <P>COPYRIGHT: (C)2009,JPO&INPIT |
