A beverage containing vinegar-pickled egg and ginger extract and a manufacturing method thereof are provided to improve taste and appearance of the vinegar-pickled egg beverage by mixing lemon fruit juice, enzymatic treatment stevia and ginger extract on the vinegar-pickled egg. A beverage containing vinegar-pickled egg and ginger extract comprises 30-70 weight% of vinegar egg, 1-10 weight% of ginger extract, 0.05-0.3 weight% of enzymatic treatment stevia, 5-20 weight% of lemon fruit juice and purified water. A method for manufacturing the beverage comprises a step for mixing the vinegar egg, ginger extract, enzymatic treatment stevia, lemon fruit juice and purified water and a step for sterilizing a material at 50-60°C and cooling the material at 35°C or below. |
