摘要 A method for preparing a sliced semi-dried persimmon is provided to prevent a skin of the persimmon from hardening and increase sugar contents by gelatinizing the inside of the persimmon. A method for preparing a sliced semi-dried persimmon comprises the following steps of: removing astringency of well-ripened persimmon; peeling and slicing the astringency-removed persimmon; drying the sliced persimmon in a drying chamber for 10-25 hours; drying and maturing the dried persimmon at a temperature of 25-33°C for 16-24 hours; and re-drying the matured persimmon with 10-70Hz wind for 24-36 hours at 5-25°C.
