<P>PROBLEM TO BE SOLVED: To provide at low cost and efficiently fried potatoes which maintains firmness, while having a large specific surface, by a method of frying which utilizes edible oils and fats. <P>SOLUTION: The method for producing fried potato includes frying of potatoes, wherein multivalent cations are made to come into contact with parts of the potatoes that have no skin before frying potatoes.
