<P>PROBLEM TO BE SOLVED: To provide a water-dispersible vegetable sterol composition produced by using a water-dispersible composition as a substitute for free vegetable sterol which is less apt to dissolve in water so as to be usable for water-type food and drink, to be held in a stably dispersing condition which will not cause precipitation nor isolation of the vegetable sterol, even when stored for a long period of time, and will not exert adverse effects on texture, flavor and/or the like, even in added foods or drinks. <P>SOLUTION: The water-dispersible and free vegetable sterol composition is produced by using an emulsifier, containing citric acid monoglyceride and/or succinic acid monoglyceride as essential components as an emulsifier to make free vegetable sterol particles, each having an average particle diameter of 1 μm or smaller disperse in a water-type solvent. <P>COPYRIGHT: (C)2009,JPO&INPIT |
