<P>PROBLEM TO BE SOLVED: To obtain an improve for taste and flavor, which relieves an alcohol smell and its irritation in alcohol-containing food and beverage products and makes the food and beverage products mild and refreshing and the alcohol-containing food and beverage products having improved taste and flavor. <P>SOLUTION: The improver for the taste and the flavor of the alcohol-containing food and beverage products contains an internally branched cyclic structural segment, an externally branched cyclic structural segment and a glucan having ≥50 polymerization degree as active ingredients. The alcohol-containing food and beverage products are obtained by adding the improver for the taste and the flavor of the alcohol- containing food and beverage products to the raw materials of the alcohol-containing food and beverage products. Preferably, the alcohol-containing food and beverage products contain 0.001-20 mass % of the glucan. Preferably, the alcohol-containing food and beverage products are each one kind selected from liquors, alcohol-containing seasoning, cakes, dairy products, pickles and syrups containing the liquors or the alcohol-containing seasoning. <P>COPYRIGHT: (C)2004,JPO |
