This invention relates to isolated polynucleotides encoding enzymes consi sting of a carboxypeptidase-like protein, a methyltransferase and a glucosyl transferase, involved in the biosynthesis of .beta.-amyrin-derived triterpen es in plants and seeds. The invention also relates to the construction of re combinant DNA constructs comprising all or a portion of the isolated polynuc leotides of the invention, in sense or antisense orientation, operably linke d to at least one regulatory sequence.
